rockfall spiced rum cocktails

Rockfall Spice 75

Serves 6

Ingredients

200 mls Rockfall Rum

90 mls lime juice

600 mls champagne or prosecco

60 grams golden caster sugar

orange twist

Method

First gently warm the caster sugar with 30 mls of water in a saucepan. Cook until the sugar dissolves, then leave to cool.

When cooled pour the mixture through a lined sieve (a coffee filter or double layer of kitchen roll should do the trick) into a cocktail shaker. There should be around 60 mls of this mixture.

Add ice, the Rockfall and lime juice into the shaker and vigorously shake. Pour into the champagne flutes or saucers and top up with the fizz adding an orange twist to each.

French 75 is one of our favourite cocktails and this is the spiced rum version of it. For an extra dimension add 1 tbsp of allspice to your caster sugar mix. It will give it that extra zing. This is a boozy Christmassy glass of bliss. Serve before lunch, after lunch, mid-afternoon, early evening, pre-dinner, after dinner…and so on. You can literally serve it at any moment of the day and it will be perfect.
