Add the Rockfall, Marmalade, squeezed mandarin juice, and Star Anise into a cocktail shaker, put the lid on and leave for five minutes.
Then add a handful of ice to the Rockfall Marmalade mix and shake vigorously.
Pour into a highball glass, top up with Champagne and Prosecco and add an orange twist to serve.
This is an absolutely delicious spiced rum cocktail which we absolutely love to make at the start of an evening, I (Claire) could happily eat an entire jar of marmalade with a spoon as a snack…so this cocktail is right up my street. The mandarin juice and marmalade work like an absolute dream when mixed with Rockfall which is flavoured with orange zest.
