Rockfall Frozen Daiquiri

Ingredients

100mls Rockfall Rum

200g frozen raspberries

1 tbsp lime juice or half a freshly squeezed lime

1 tbsp sugar syrup

Method

Blend the frozen raspberries so they are completely smooth (you could also rub through a very fine sieve to remove the pips but we haven’t found this necessary as long as you blend them for long enough).

Rinse the blender and throw in a large handful of ice and crush.

Then add the raspberry mixture along with four measures of Rockfall, the lime juice, and the sugar syrup and whizz in the blender until well combined.

Pour into cocktail glasses or flutes, then garnish with a raspberry and a sprig of mint.

A Daiquiri is a wonderfully delicious rum cocktail. We love a classic Daiquiri (simple with Rockfall, lime juice, and sugar syrup) and a Strawberry Daiquiri is just superb, you can make it as above but yep you’ve guessed it use strawberries. The Raspberry Daiquiri is tart and flavoursome and works incredibly beautifully with spiced rum. You might find you don’t need the sugar syrup? It’s all a matter of taste.
