100ml Rockfall Rum
50ml lemon cordial
25ml lemon juice
Club soda
Method
Fill a cocktail shaker with ice, then add the Rockfall, lemon cordial and lemon juice and shake well.
Fill up two tall glasses with ice and pour the Rockfall and lemon mixture into them and top up with a good quality club soda. Garnish with a slice of lemon and a Maraschino cherry.
A Rockfall Collins is our spiced rum twist on a traditional Tom Collins cocktail which is usually made with gin. This is a very quick, refreshing and easy rum cocktail to make and just as delicious with Rockfall. We’ve stayed close to the original with the beautiful lemon flavours, but you could also use elderflower cordial. If you want to make it a slightly more boozy then adding a little drop of Limoncello would be a wonderful thing too. This drink is calling out to be drunk at BBQ’s, picnics and while you are having fun in the sunshine. A rum in the sun cocktail!
