Chop a lime add to a cocktail glass or a highball. Pour in the Rockfall and muddle the lime and Rockfall together with a muddling stick or the handle of a wooden spoon.
Add ice, then a bunch of mint leaves. To wake up the mint and release the oils place the sprig in one hand and clap between your palms and put into two cocktail glasses or highballs.
Divide the raspberry beer between each glass and serve, garnished with a few raspberries.
A rum and beer cocktail…who knew? Honestly it is such a great combination with Rockfall. Raspberry beer in particular works like a dream with Rockfall, they complement each other perfectly resulting in a really light cocktail but full of body adding length and flavour to this drink. It’s a spiced rum cocktail winner in our household and something a bit different as not many people realise how delicious a good quality beer can work in a cocktail.
